Cuz's is a roadside hut on the edge of Carlisle Bay, near the Pebbles Beach boardwalk, and has become a Bajan institution for one thing: the fish cutter. A cutter is a fresh-baked salt bread roll stuffed with fried marlin or flying fish, cheese, lettuce and Bajan pepper sauce, handed over in a paper wrap. There is no seating to speak of — people eat on the sea wall or take it to the beach. Open through the day until the fish runs out, usually around mid-afternoon. Cash only, and the queue moves quickly.
