Brown Sugar has been serving classic Bajan cooking at Aquatic Gap, just outside Bridgetown, for decades and remains the island's best-known sit-down spot for a traditional Planter's Buffet lunch. The restaurant occupies a wooden chattel-style building surrounded by tropical foliage, with cou-cou and flying fish, jug-jug, pepperpot, pickled breadfruit, macaroni pie, rice and peas and a long table of Bajan sweets forming the heart of the spread. Lunch runs 12-2:30pm and dinner 6-9:30pm, and the setting and menu make it a standard stop for visitors wanting to try the national dishes in one sitting.
